Why does text copied from a PDF have line breaks?

How do I remove line breaks in Word or Google Docs?
In Word, use Find and Replace with ^p (paragraph mark) or ^l (manual line break) and replace it with a space. Google Docs needs regular expressions turned on to search for \n. Pasting into this tool first is often quicker and keeps paragraphs intact.
Does removing HTML tags keep the text?

Can I turn a list into comma separated values?
